No More Green Chili

Sorry for any confusion! I found the correct print button!!!! Do make it with 6 chicken breasts, I have hearty eaters, do I double everything? You know, I have never tried it! I think if you added all of the ingredients but the cheese, the stirred in softened cream cheese at the end it would be pretty similar! Kimber, I found this recipe this morning and I made it tonight for dinner. I made it in the crock pot and it was excellent!

My crock pot cooks hot, so I cut the chicken into chunks and tossed it with the spices and peppers. After an hour I added the cheeses and cooked for another hour. I thickened the sauce with cornstarch and water. This was excellent and I will definitely make it again! I served it over rice and everyone had a second helping! I wonder if I could substitute a drained can of Rotel tomatoes for the chilis? I do that with so many Texas Mex recipes.

I add the reserved liquid from the Rotel to the water when I make Mexican rice. It gives it a nice little kick. I added a can of Rotel tomatoes with green chilies and cooked in the crock pot on low for 6 hours, and wowza….

So glad you tried it successfully with Rotel. That is exactly where I was thinking of going with this recipe. Julie, did you put the cream cheese mixture in with the rotel and chicken or did you wait and add it later? Yes I would like to try this in the crockpot as well. Did you wait to add the cheeses or when exactly did you put them in the dish.

Can you make this and freeze it I wonder? About to have a baby and this would be a great freezer meal! Thanks for the cool recipe! I shredded chicken and heated up the rest of the ingredients in a saucepan and made enchiladas with corn tortillas…it turned out amazing! Sorry but it gets frustrating.

Although they do have a small amount of heat, these are relatively mild. I feed them to my kids! Unless you are extra sensitive you should be just fine! Just made this for dinner, and my husband who really prefers beef was all over this chicken. He loved it and said if I am making chicken, this is the way he wants it. Trying it today with the ingredient that was left out of the recipe.

Made this two weeks ago for my family one of which is a picky teenage girl. Also a bonus, the cream cheese mixture keeps the chicken moist. We had this for dinner tonight over a green salad. We eat low carb for our weight and health.

Thank you for sharing your recipe. I made this tonight for dinner and my boyfriend and I both loved it. I like things a little more bland and he likes them a little more on the spicy side. It was super simple to make and tasted great.

It was definitely a win! This is in the oven right now! Plan on serving on a bed of brown basmati rice and seasoned black beans! I just made this — WOW — it is delicious! Even my super picky 14 year old ate it in a low carb tortilla!

I am keto, so I splurged and ate it over a couple of tortilla chips. The sauce the it made was delicious over chopped broccoli. I might even add some chopped green onions next time. Because there WILL be a next time! Just dump in the whole can! The juice will help add lots of flavor when mixed in with the cheese! This was so incredibly delicious!! Wonderful the next day too!!

This looks really good. Plan on making it tonight. One question though, do u think boneless, skinless thighs will be ok? I think it should be delicious, you might just want to keep an eye on the cook time because it may be less. I made this and it was FABulous first time out! This is a keeper and low carb too. Loved the crispy cheese topping. I have made this three times. Each time it turns out super soupy. Could it be that my chicken is too close together? Tastes good, but so runny.

  6. Omitted the garlic powder and cumin, but used all the other ingredients. It came out great! Just seems like a good basic recipe that invites experimentation. I hardly ever time to take the time to comment on recipes but…. It is absolutely perfect!! I actually cubed the raw chicken before I put in the casserole dish.

    I added a little cilantro to the cream cheese mixture and I served it with cilantro lime cauli rice and avocado slices! Thank you so much for this amazing recipe that I know we will make again and again! I had all the ingredients so i just whipped it up. I wish I had more shredded cheese though. I will for next time! This was so delicious, I would double or triple the sauce next time I make it. I had it on rice, I will be trying mashed potatoes.     We ate it over white rice the first night—so cheesy and delicious. I stored the chicken and rice in one container and used those leftovers to fill burritos the next day! It was wonderful and our friends loved it. Made this several times now. This was absolutely incredible flavor and so easy to make.

    It will become a staple for me. To keep it keto I served it over roasted cauliflower and it was amazing! A leftover chicken breast with sauce could be shredded and fill a tortilla with verde sauce over it. Also perfect with a salad with vinaigrette and a couple of banana peppers to add some sour to this creaminess! I made this tonight for dinner and it was delicious!

    The only thing I would change is, to add more spice..

    I think I would add some chopped jalapenos! Very good doubled the recipe added half of mixture on bottom of pan and the rest on chicken better flavor. I made it and it was delicious. This came out really watery but I did use a little more chicken than the recipe calls for. Do u think it made a difference. It still tastes good. Made this last night for dinner and it was a hit! We will be adding this to our regular rotation. I sautee the chicken in olive oil, with some seasonings before I cook it. This recipe was delicious!

    I actually made it all in a skillet. After cutting the breast pieces into strips, I browned them for 5 minutes on each side and spread the mixture into the skillet. So velvety and cheesy! My family loved this. It will be a regular in our dinner routine.

    I discribed it as a chicken enchilada with out all the work. Made this for dinner last night and it was absolutely delicious! My husband and I chose to have it with wheat tortillas. I used deboned chicken thighs instead of breasts and made some substitutions: Greek yogurt for half the cream cheese, and fresh roasted peppers—two jalapenos, two hatch chilies, and half a red bell pepper—instead of the 4 oz can.

    Then I served it on homemade tortillas, which just made it that much better. This has become one of our favorites. My husband and I are eating low carb so we usually serve it over riced cauliflower. Its so flavorful and the easiest recipe ever! Made this tonight it was delicious!     Topped mine with pepper jack. It is absolutely company worthy!!! Does anyone know how many carbs are in 1 serving and how much is one serving. This turned into a big soupy mess. I did salvage it though by chopping up the cooked chicken and then just adding some of the sauce into it and then put it over the rice. It is really good and I will make again but I think I will cook the chicken separately and just warm the sauce in a sauce pan so it doesnt break or get soupy from the chicken juices, and then put the sauce over the chicken and stick under the broiler for a minute to melt the cheese.

    The rest of the food was also excellent. The Chicka-Chicka Boom-Boom enchilada had a perfect mix of flavor and heat. Unfortunately, I don't live near a Chuy's.
